Mediterranean Lamb Skewers

Serves 2-4

2 garlic cloves

½ tsp ground cumin

¼ tsp ground coriander

¼ tsp chilli powder

2 Tbsp lemon juice

2 Tbsp peanut butter

1 Tbsp Bertolli Robusto

400g cubed lamb

8-10 bamboo skewers

Salt, to taste


1. Measure 2 cloves of chopped garlic, cumin, coriander, chilli powder, lemon juice, 2 tablespoons of peanut butter and Bertolli Robusto olive oil into a plastic bag and massage to mix.

2. Add the cubed lamb to the bag and massage so the meat is covered with the marinade. Cover the skewers with hot water and set aside to soak while you preheat the grill.

3. Thread the meat onto the skewers then place them 5-10cm below the preheated grill and cook for 6-8 minutes, turning once.

4. Arrange the lamb skewers on plates or a platter and drizzle with some of the sauce. Accompany with rice or a side salad.
