Lemon, Pine Nut and Vanilla Cookies

Makes 24 cookies

2 cups 'all-purpose flour'

1 cup sugar

1/4 tsp salt

1/2 tsp baking soda

3/4 cup Bertolli Light in Taste Olive Oil

2 Tbsp grated lemon zest

1 ½ lemons, juiced

1 tsp vanilla extract

1/3 cup pine nuts (or any nut of your choice)

Sugar, for rolling cookies


1. Preheat oven to 180 degrees. Sift flour, sugar, salt and baking soda together in medium-sized bowl. In another small bowl, whisk together the olive oil, lemon zest, lemon juice and vanilla.

2. Add wet ingredients to the dry ingredients, then mix lightly until it resembles wet sand (when the dough is squeezed it should form a solid clump). Incorporate pine nuts. Using your hands, roll dough into balls about the size of a walnut.

3. Roll in a little sugar and roll the cookie balls gently in your hands to distribute it. Put the cookies about 5cm apart on cookie sheets. Chill cookies at least 30 minutes and then bake for about 12 minutes
